Fructosyl transferase

1. Introduction

Fructosyltransferase, EC 2.4.1.9, which also called b- Fructo-furanosidase, EC 2.4.1.26, it is a kind of hydrolase with metastasis activity and wide receptor activity, which could be sucrose as raw material to synthesis kestose and other oligosaccharide. Fructo-oligosaccharide, also known as Fructooligosaccharide (FOS), is an excellent food ingredient, which has the physiological effect of probiotics. FOS is mainly contained Kestose, but also contains Nystose and 1F-fructofuranosylnystose.

We use the Aspergillus Niger high yield bacterium to refine after the deep fermentation. If we use this product to produce FOS, the conversion rate could achieve 56%-59%.


2. The reaction sugar spectrum of FOS synthesized by typical enzymatic method.

3. Characteristic

a.     Temperature: The best suitable temperature is 45-50

b.     pH: The best pH range is 5.0-5.5

c.     Effects of metal ions on enzyme activity: EDTA has an active effect on enzymes.


4. Specification

a.     Activity: 3000U/mL

b.     Enzyme activity Definition: In the best enzymatic reaction condition (45,ph5.5), converts sucrose into oligosaccharides, the amount of enzyme required to produce 1pmoL kestose per minute is defined as an enzyme activity unit (U).
