1. Introduction
Fructosyltransferase, EC 2.4.1.9, which also called b- Fructo-furanosidase, EC 2.4.1.26, it is a kind of hydrolase with metastasis activity and wide receptor activity, which could be sucrose as raw material to synthesis kestose and other oligosaccharide. Fructo-oligosaccharide, also known as Fructooligosaccharide (FOS), is an excellent food ingredient, which has the physiological effect of probiotics. FOS is mainly contained Kestose, but also contains Nystose and 1F-fructofuranosylnystose.
We use the Aspergillus Niger high yield bacterium to refine after the deep fermentation. If we use this product to produce FOS, the conversion rate could achieve 56%-59%.
